Join Chef Damian D’Silva on a culinary retrospective of Singapore’s heritage cuisine, beginning with the Orang Laut who thrived in Singapore's coastal waters long before colonial powers set foot on our land. As various ethnic communities embraced each other's culture against the backdrop of colonial influences, how did the culinary lineages of the Chitty Peranakans, Jawi Peranakans, and Eurasians emerge through “organic fusion”? With a dash of ingenuity and a little twist on common ingredients, techniques, and recipes, he tells us how new Singaporean dishes were created.
